So i would say 12.9" is better. 11" is doable but 12.9" gives you more space and doesnt feel cramped. Hey, I would recommend getting the iPad Pro M1 Wi-Fi only. I have the same model and I love it. It's fast, smooth, and has a great screen size for most tasks. The cellular model is not really worth it unless you travel a lot and need constant internet access. Most places have Wi-Fi nowadays and you can always use your phone as a hotspot if you Performance. As a professional illustrator that only uses Procreate, I've had both 11 and 12.9, and both have their pros / cons. I went back and forth in iPad Pro sizes since my first one (the 2016 9.7), and from all the models Ive had, I honestly feel the 11 is more manageable for the actual drawing movements with the hands - it's more comfortable than the 12.9, effort wise.
PhD student here - I don’t think the 12.9 is too big, and it’s definitely very comfy if you want to draw. How heavy it gets depends on what case you get for it, if you want to use it handheld a lot, make sure you don’t get a case that’s too heavy. I absolutely love the screen size and I don’t mind carrying it around at all. UeJu.
